Healthy Lunch

MM, just made myself a lovelyyy lunch. I love eating healthy and clean and thought I'd start sharing some of my day-to-day recipes with you. 


Today's salad: Sweet Potato and Chicken

- Some Grilled chicken
(I just broke some of the breast of a whole grilled chicken. Normal portion sizes vary from 150-200-250 g... you choose :) 
- Sweet Potato 
( I used half a biiig one)
- Rocket Salad
- Cucumber
- Pear slices
(
I used about half a pear)
- You can really incorporate whatever veggies; tomatoes, peppers, ...

  1. Cut the sweet potato in slices, and then quarter them ( makes it easier and faster to cook). Optional: When cooked, mash them and season with salt and pepper.
  2. Rinse the rocket salad 
  3. Slice and dice cucumber and pear
  4. Put everything into bowl including chicken and voilá

Dressing:
I also like to add a little flavor. Sometimes I just use olive oil (great for skin and hair) and balsamic vinegar. You can however mix it with some mustard (dijon) and honey, and it'll make a great vinaigrette. 


There you go! A great yummy salad high in protein :)

Starstruck fashion obsessed teen

Well well well, this weekend has been quite a whirlwind of happiness, stress and all in all fun. My best friend from Norway came down and we had a lovely classy fashion-ista foodie weekend in London. We ate awesome food!! (CAN I RECCOMEND: Electric Diner for honey fried chicken wings and the knickerbacker glory, granger &co for delish aussie goodness and yauatcha for amazing chinese dimsum.)

And then. yes, and then. We stood outside two of the fashion shows: Topshop and Burberry. Since we have no invites, as we are not top bloggers, fashion editors or celebs of any kind we stood outside looking at all the glory. May i say, the fashion world is quite exquisite. Yes, I imagined amazing clothes, glowing faces and details of perfection. But wow, in real life. After, Kendall Jenner, Anna Wintour, Daisy Lowe, MIA, Carine Rotfield, Mario Testino, HARRY STYLES, Bradley Cooper, Tanya Burr and many more, i was exhausted. too much in one weekend.
However can i say to those who came across like human beings floating above everyone else because they are invited to fashion week: In the end, everyone lives together as similar human beings.  so arrogant fashionistas, calm down.

Better

Thanks for kind comments on my last post :) I am feeling much better, drinking tea and sleeping well to make the restitution project quicker. However, headaches are still not to be avoided now and then. All is good though. 

Meanwhile, the norwegian "russefeiring" (google it) is under way. So my illness is like, totally, perfect timing with exams and all. 


With exams and all being the center of attention these upcoming weeks, I'm afraid blogging has to be discouraged. However, after the 16th of May, y'all should be buzzing (I am at least) because I AM THEN DONE WITH 13 YEARS OF SCHOOL. Jeezus. Seems crazy. To be graduating is very surreal. Feels like it was yesterday that I started high school, with little knowledge of how quickly time goes. TIME FLIES WHEN YOU'RE HAVIN FUN HEY. (HO)

Anyway, all though my blog is low priority, I very much think my TUMBLR is going to be very much alive. So if you would like to see my life ramblings, and funny/cool fashion stuff, oh and hot guys, oh and FOOD, you can follow me there. 




On that note, I'll leave you with a healthy lunch tip! 

Salmon Burgers with Sweet Potato

I fried 150/200g Salmon Burger (I bought the salmon burgers at the local store, but you can make them using one of these recipes) for like 10 min on the pan with some oil. 
Boiled 150 g Sweet Potato (chopped up) for about 5-10 minutes. 
Then i added dressing (Your preferred dressing!) I used Rhode Island Dressing and Jalapenos Relish. 

Also, another tip:

For a light snack, or to have with the salmon burgers, you can dry pan Pine nuts and/or any nut you would like. Super Scrummy :)
